Spices

Food would be boring without spices. They give colour, aroma, flavour and sometimes even texture to food. Each spice, chili or herb has specific, unique chemical compounds that create the sensual qualities for which we value them and creating an aroma that makes you salivate.

Types of spices can be categorized by the part of the plant they are from, the kind of flour, or by the spice mixture. For example, Cajun spice, curry spice, jerk spice and garam masala are all spice combinations using several spices.

Here is the list of some spices grouped by their flavour:

  • Hot spices include pepper, cayenne pepper, hot paprika, chili and fennel.
  • Sweet spices are ones such as all spices, cardamom. cinnamon. saffron and coriander

Chillies

Chilli is a fruit which belongs to capsicum genus, it has many varieties which are differentiated on its pungency measured on scoville scale. Chili fruit when ripened and dried becomes red chili, which is further grounded to form red chili powder. These are categorized as hot pepper. Red chili became famous all around the world because of its characteristics like pungency, Tate and flavour matched black pepper. India dominates in chilli production and is the largest exporter as well due to supplier quality found here, in India major production comes from Andhra Pradesh, Maharashtra, Karnataka, Orissa and Rajasthan.

Sanam 334 is the most famous type among the chillies and has a huge demand throughout the world. It grows widely in the Guntur, Andhra Pradesh. The skin of the crushed chilli is thick, red, hot and rich in vitamin c.

Teja chilli is the finest grade of Guntur chillies in India. It’s mostly produced in the southern states of Indian fertile land and exported as whole Dried red chilli or Powder form, Usually bright red in colour. It’s also known as S17 Type chilli. Teja S17 chilli has fiery heat and is considered one of the hottest chillies in India.

Byadagi chilli is also known for its deep red colour and is less spicy and is used in many food preparations in South India. Byadagi chillies come in two types: dabbi and kaddi. Byadagi dabbi, which is small and plump, is more popular for its colour, flavour and taste. Though it has more seeds, it is less spicy compared to the kaddi variety. This variety is best suited for masala preparation and oleoresin extraction

Mundu chilli is a very unique variety of dried red chillies. Ramnad mundu-s9 dried red chilli is small and round shaped chilli. Its unique flavour is its speciality. Mundu s9 red chilli is grown exclusively in the Ramnad district of southern Tamil Nadu -India. Its skin is dark, shiny and reddish-yellow.

Wrinkled 273 dried red chillies are magnificent red colour, mouth-watering aroma and medium pungency is what makes this chilli so admirable among the spice lovers, for those who prefer less spiciness in their food can opt for wrinkled 273.

Turmeric Finger & Powder

Turmeric is the ground root of curcuma longa and its active compound is curcumin. Curcumin is the yellow pigment that gives turmeric curry & yellow mustard their colour and it has been used for countries in cooking & cosmetics. Turmeric has antimicrobial, antioxidant, anti-inflammatory and anti-cancer activities.in 2020-2021 India has exported 171000 tonnes of turmeric compared to 137000 tonnes of the previous year. Fenugreek

Fenugreek is an annual herb mainly cultivated for seed as well as for its leaves (fresh and dried). The seeds are used as a spice and condiments to improve the flavour and the nutritive value of foods. Seeds have strong odour and slight bitterness in taste, seeds are used as seasoning agent for pickles and vegetables. India occupies prime position among fenugreek countries in the world. Rajasthan alone produces more than 80% fenugreek of the country, besides other growing states are Gujarat, Madyapradesh, Chhattisgarh & Uttar Pradesh.

Mustard

Mustard is a yearly herb grown in India as an oil seed crop or as a vegetable or as fodder, of which, three varieties are known for its condiment value. It is also used as an ingredient in many dressings, glazes, sauces, soups, and marinades. Cumin Seeds

Cumin seed is the dried, white food with the greyish brown colour of a small slender annual herb.
